Under drift plasseres hele tofuplater manuelt flatt på det fremre enden av det undervannstransportøren. Maskinen skyver deretter tofun automatisk fremover i vannet og skjer den i biter med jevn størrelse ved hjelp av en presis skjæremekanisme. Etter skæringen skilles tofubitene forsiktig i vannet og faller jevnt ned i de enkelte emballasjekasser under dem.
