Under operation placeras hela tofuplattorna manuellt platt på det framre änden av det undervattensbandtransportören. Maskinen drar sedan tofun automatiskt framåt i vattnet och skär den i bitar med jämna storlekar med hjälp av en precis skärmekanism. Efter skärningen separeras tofubitarna försiktigt i vattnet och faller jämnt ner i de enskilda förpackningslådorna under dem. Drift helt i en vattenmiljö minskar friktion och produktskador, vilket säkerställer rena skärytor och intakt tofuform.
