Toiminnan aikana kokoja tofulevyjä asetetaan manuaalisesti tasaisesti vesialustan etualalle. Konetta työntää sitten tofua automaattisesti eteenpäin vedessä ja leikkaa se tasaiseen kokoon tarkalla leikkausmekanismilla. Leikkauksen jälkeen tofu palat erotetaan varovasti vedessä ja putoavat sulavasti alasoleviin yksittäisiin pakkauslaatikkoihin. Työskentely täysin vedessä vähentää hiekkaa ja tuotantomarkkinoita, varmistaen puhdasta leikkauspinta ja tahdonmukaisen muodon. Konetta voidaan yhdistää sujuvasti tofun pakkauskonetta automaattiseen tiivistykseen ja tuotantopäivämäärän tulostukseen, vähentäen merkittävästi työvoimatarvetta parantaen samalla tehokkuutta ja tuotantoyhtenäisyyttä. Se on olennainen osa nykyaikaisia automaattisia tofun tuotantolinjoja.
